  • Researchers Cook up ‘9-Millet Porridge Mix’ for Good Health

    Saket Saurabh

The staple food of our ancestors, millets have recently emerged as the new superfood! Interestingly, also used as cattle feed, millets were once considered the last option for the very poor who could not afford wheat or rice.

Millets are small, whole grains belonging to the Poaceae family, and are usually grown in semi-arid regions. They contain a considerable amount of fibre, protein, calcium and antioxidants. They are gluten-free and have a low glycemic index. This yields better nutrition when consumed compared to rice and wheat.

Inspired by the nutrients in millets, a team of Shoolini food tech researchers, Dr Pankaj Kumar Chauhan, Professor, School of Bioengineering and Food Technology and Mahima Shree NM (MSc Food Technology) have created a unique porridge with ingredients from nine kinds of millets.

The development of the ‘9-Millet Porridge Mix’ is a good substitute for the Indian staple diet and the porridge can be consumed by diabetics and people who suffer from gluten intolerance.

This porridge mix targets a group of people who want to control diabetes, who are looking for healthy alternatives and also who want to transition towards healthy eating. This product is a very healthy alternative to rice and wheat and is rich in dietary fibre as well. This food product is designed so that it is quick to make, high in minerals like magnesium, phosphorus and calcium, low in fats, zero cholesterol and gluten-free. Millets are still not popular among people but these are proven to have greater nutrition than rice, wheat, corn and other cereals.

The 9 types of millets include Finger Millet, Pearl Millet, Proso Millet, Barnyard Millet, Foxtail Millet, Little Millet, Browntop Millet and Jowar. It also contains almonds, cinnamon, cardamom and Vitamin E. The Kodo millet used in the formula helps to regulate blood glucose levels and finger millets is a rich source of calcium. While a mix of a couple of millers is available in the market, there is no other product with nine varieties of millets.

The incorporation of millets like Browntop Millet and Pearl Millet in foods needs to increase. A healthy diet and lifestyle are the key to solving issues like malnutrition, lifestyle diseases and others, according to Dr Chauhan.

Dr Pankaj Kumar Chauhan said the mix they had created did not contain any artificial flavours, colours or preservatives and was free from any kind of chemicals. “This product can be cooked to yield a wholesome meal in the form of a porridge which takes less than 5 minutes to cook. It consists of a considerable number of polyphenols and being low in glycaemic index, it helps to regulate blood sugar levels. Consuming this product will improve overall health,” he added.

  • Weeds to Weed Out Fungus

    Saket Saurabh

The growth of weeds is a constant problem faced by agriculturists, horticulturists, and even those fond of kitchen gardening. Weeds must be removed frequently as they eat away the nutrients and stunt the growth of crops besides vegetables and fruit.

Even cattle and other animals do not eat such weeds due to their pungent smell. Obviously, the weeds, such as lantana and parthenium, also commonly known as congress grass, have no value and are seen as a menace& But not so by Assistant Professor Nitika Thakur, Faculty of Applied Sciences and Biotechnology, Shoolini University. She is researching the use of these weeds to prepare anti-fungal agents to preserve vegetables and fruit before and under transportation. She came up with the idea of using anti-microbial properties of the weeds to target some potential diseases affecting cash crops like tomatoes.

Alternaria alternata is a fungus which causes huge damage, even as high as 40 per cent, during storage and before the transportation of crops like tomatoes and cauliflowers. To counter the damage caused by the fungus, Dr Nitika and PhD scholar Dr Gaurav Sharma are researching on the development of biocontrol agents using the weeds growing in abundance.

To prepare the formulation, weeds are dried and powdered. Leaves of weeds, rather than flowers, have been found to be more effective. The extract is then added with anti-fungal solvents to prepare an antidote to the Alternaria alternata fungus. The preparation can be used to spray harvested vegetables and fruits.

Dr Nitika said the experiments in the labs have yielded very encouraging results. “In fact, there is 70 per to 80 per cent reduction in the damage caused by the Alternaria alternata fungus. We have now planned to introduce the formulation in field conditions by spraying vegetables and fruit before transportation,” she said, adding that the formulation would be tested vigorously before bringing it to the market.

In commercial terms, such a formulation could lead to huge savings for farmers by reducing the extent of damage caused before and during the transportation of crops.

The idea to use the weeds to formulate anti-fungus agents came to Dr Nitika when she saw parthenium weeds flourishing on the roadside. In future, she said, many synergistic combinations of these weeds can be tested and evaluated for antimicrobial properties. In addition, they can be positively implemented in organic agricultural practices.

This research is aligned with the Sustainable Development Goals of Shoolini University. Earlier, the university has also been ranked in the category of Clean Water and Sanitation along with Affordable and Clean Energy utilisation.

The entire project has been supported and funded by the State Funding agencies (HIMCOSTE) and is being executed with the help of the management and colleagues at Shoolini University.

  • BookmyExams is the Vibe: Shoolini is a Trendsetter

    Shubh Rana

The Academic Council of Shoolini University has decided to modify the examination system from the current semester. Now on, Term-I, II and III examinations, previously known as end-term examinations, will be organised through online mode under an AI-based Proctored solution. Students can use their personal laptops or the University’s IT lab. Questions will be presented randomly from the question bank. Use of mobile phones and unfair means is strictly prohibited. The system would work through Artificial Intelligence and students violating the rules would be given three warnings after which the system would be switched off. Term I exams are scheduled from September 20, for which students can book their exam slot under ‘Book My Exam’ on MyShoolini app. Class schedule will remain functional throughout the exam period.

Participation in each of the evaluations, such as assignments, quizzes, seminars, practicals, projects, AI, etc., including term exams, as specified by the subject in charge is a must for each student to complete assessments under a total of 100 marks. The Schools of Pharmacy/Agriculture/Law will follow a different system as laid down by the regulators of the respective council and employ relevant IT tools, wherever applicable.

Candidates must remember that a student can be detained if he/she is unable to hit the 75% mandatory attendance mark before the conduct of every term exam. The paper will be in MCQ format and/or have subjective questions from a question bank as accorded by the subject in charge. The exam will not be reconducted in any case.

The IT team will provide detailed directions, training, help and support to students and faculty. Students are requested to keep themselves updated with the MyShoolini Dashboard.
Shoolini University has developed a futuristic approach for the holistic development of its students. It will not only test their knowledge and intelligence but also their memory. Classes will continue during the exams. Exams should not be a burden but a part of the learning process.
